Backpack Gumbo

Need a big pot for gumbo? I don’t think so. This quick and easy recipe will bring Momma’s kitchen wherever you go.

Prep time: 5 min
Cook time: 15 min

Ingredients

  • 4 tbsp powdered roux mix
  • 3 cups water
  • 1/4 cup Dried onions
  • 2 tbsp Dried peppers
  • 1 cup instant rice
  • 1 foil pack chicken breast
  • 1 small summer sausage
  • Seasoning (Salt, Cayenne, garlic powder)

pre-trip prep

Put rice and dried pepper & onions in two separate zip top bags

Instructions

Dissolve roux in pot of boiling water Allow to boil for 10 minutes.
Add rice, onions and peppers.
Add chicken.
Cube or slice sausage and and bring to a boil.
Simmer 5 minutes.
Season to taste.
